Birch Table runs 28 covers and a rotating seasonal menu. We documented supplier Tuesdays and the Friday prep hour for three months straight — no styled shots, just the kitchen moving.

By week twelve, their Friday reservations filled by Wednesday. Local foot traffic up week-on-week for ten of those twelve weeks.
